This single-serve Double Chocolate Pumpkin Fudge Cake has the seasonal pumpkin spice flavor you love, with the rich fudge factor of your favorite chocolate cake. For under 200 calories and with 14 grams of protein, you can eat what your love, get an amazing dessert fix,  and reach your goals!

Ingredients
  • 15 grams egg whites (1 tablespoon)
  • 8 grams natural cane sugar (2 teaspoons)
  • 15 grams pumpkin puree (1 tablespoon)
  • 1 1/2 tablespoons unsweetened cashew milk
  • 1 tablespoon granulated stevia (or 1-2 stevia packets)
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon baking powder
  • 12 grams chocolate protein powder (a blend of casein and whey works best) *
  • 5 grams unsweetened cocoa powder (1 tablespoon)
  • 15 grams white whole wheat flour (2 tablespoons)
  • pinch salt
  • 5 grams mini chocolate chips (1 teaspoon) 

Directions:
  1. In a bowl, whisk together first 7 ingredients, from egg whites to baking powder.
  2. Add the cocoa and protein powder, and mix again.
  3. Now mix in the flour until it is just combined. Over mixing will make the cake gummy.
  4. Spray a small microwavable bowl with cooking spray, and add your batter.
  5. Top with chocolate chips, and microwave for 1:00 - 1:15.
  6. Allow to cool for a few minutes and enjoy!


* Brands such as Devotion Nutrition, Jym, and Pescience are whey and casein blends. Using a 100% whey protein in here will make it much drier.
